HIBISCO NOIR — REAPER, MANGO, HIBISCUS & LIME

A sauce fermented for 21 days combining Carolina Reaper, ripe mango and carrot to create a balanced tropical base, with natural sweetness and a silky texture developed during fermentation.

After fermentation, the sauce is refined with lightly caramelised roasted mango, hibiscus flower infusion, fresh lime juice and apple cider vinegar, bringing clean acidity, subtle floral notes and an elegant aromatic profile. A touch of honey helps round the acidity and integrate the flavours.

The result is a tropical and sophisticated sauce, where ripe mango opens the palate, hibiscus adds a delicate floral character and lime delivers vibrant freshness. In the finish, the elegant heat of the Carolina Reaper emerges — persistent but balanced.

It pairs especially well with grilled fish, seafood, chicken, tacos, Asian cuisine or tropical dishes, where the contrast between fruit, acidity and heat elevates the dish.
