GRENADÉ FRANÇAISE — REAPER, GRAPES, POMEGRANATE & WINE
A sauce fermented for 28 days, combining Carolina Reaper, Habanero Red and ripe fruit to create a deep, vinous and sophisticated profile. The base of green grapes, pomegranate and cherry tomatoes develops a clean, elegant acidity during fermentation, while dried figs and dates add body and richness without making the sauce sweet.
Red onion and leek provide vegetal structure and aromatic complexity. After fermentation, the solids are slowly reduced over low heat and refined with Port wine, vermouth and aged red wine vinegar, creating a mature, balanced and intense character.
The result is a fruity yet restrained sauce, with elegant vinous tension and remarkable depth, where ripe fruit opens the palate, the acidity lingers and the high heat of the Carolina Reaper emerges in a controlled and persistent way.
It pairs especially well with red meats, game, duck, aged cheeses or rich dishes, where its vinous character and aromatic complexity elevate the meal.
