BRAVIO — TOMATO, ONION, CORIANDER & HABANERO

A sauce fermented for 21 days that combines ripe tomatoes, onion, garlic and red habanero, creating a rich, fresh and deeply aromatic base. Fermentation develops natural acidity and complexity, keeping the tomato flavour vibrant while balancing the clean heat of the habanero.

After blending, the sauce is gently heated for stabilization and refined with white vinegar and fresh coriander, which bring an intense and vibrant green note.

The result is a balanced and expressive sauce: it begins fresh and vegetal, evolves into the natural sweetness of tomato and finishes with a medium-high heat, frontal and persistent, characteristic of habanero peppers.

Versatile and straightforward, it pairs especially well with grilled meats, eggs, tacos, rice, fish or any dish that benefits from fresh acidity and clean heat.
